Chef Candida Kim was born and raised in Southern California, but has lived on Kauai for last the 20 years. Her passion for food began at a young age as she traveled with her father to variety of Asian countries. She would label her father as a "foodie" before the term existed in popular culture. Growing up with a Korean mother who cooked constantly also had a huge influence on her love for food. Candida loves using fresh, local ingredients and infusing flavors that meet her clients "color" palette.
Working under profound chefs such as Niki Nakayama and Roy Choi, Candida has learned that flavors come in many different forms. They have embedded in her culinary DNA to serve her customers with wholehearted excellence. Candida's gratitude to all of her mentors comes through in each of her dishes. Her food has a story to tell, and she hopes you enjoy the ending.
Customers may now enjoy Chef Candida's sushi creations at Poipu's, Hanalei Dolphin Restaruant.
