Molecular Gastronomy Workshop with Chef Seth: October 7th

Where science meets food. Chef Seth of Kickshaws, will be sharing his secrets for manipulating ordinary ingredients and taking them to magical places.

The following techniques will be demonstrated and practiced:

- Spherification with Agar Agar

- Flavored Smoking

- Melting Salts Techniques

- Carbonated Fruit with a Whipping Siphon

- Introduction to Sous Vide Cooking

Date/Time: Saturday, October 7th, 2017, 5:00-8pm

Location: The Monkeypod Jam Shop, 2-3687 Kamualii HWY, Next to the Lawai Post Office

Workshop Includes: Hands on, personal instruction, needed supplies, heavy pupus and refreshments.

Seth Peterson, Holds a degree in biology and has worked as a lettuce farmer on Kauai's North Shore. His first baby, Kickshaws is a gourmet mobile food truck business, the first of its kind on Kaua'i.  What separates Kickshaws from other trucks on the island is cooking technique and flavor combinations.  The term, science forward food, helps to describe the cuisine of Kickshaws. Gourmet diner food with a definite twist.  He uses sous vide cooking and other avant garde techniques to create truly unique and delicious dishes.
