Workshop Includes: Hands on, personal instruction, all needed supplies, royal icing recipe and information. Light pupus will be served.
At Monkepod Jam, we preserve not only the abundance of fruits and vegetables, but also the community and heritage of our island. Preserving Hawaii Workshops are offered to our local community and island visitors looking to experience the various methods used to preserve the bounty of Kauai's agriculture. These workshops are smaller, more intimate than many of our other workshop offerings. The small class size enables each student to focus on the produce and techniques shared.
Gina Vivona graduated with a Culinary Arts Degree from the CIA, Hyde Park in 1989. Since then, she has worked as a chef at The Abaco Inn in the Bahamas, the Doral Hotel in Miami Beach, the Sheraton Resort in Bal Harbor and the Ritz Carlton in Naples. At the Ritz, Gina had the opportunity work under renowned pastry Chef, Norman Love, who inspired her to perfect the art of chocolate making. After leaving the Ritz, she focused solely on chocolate and pastry, working at the Hotel Del on Coronado Island. During that time she had the honor of creating 5 star desserts for then, President Bill Clinton and First Lady, Hillary. Finally, in 2008, Gina could not resist the call of Kauai. She left the mainland and helped open Costco in Lihue. Gina has lived on the Garden Isle for eight years now, working as Costco’s main baker and cake decorator. She also founded the famous pink kettle corn truck, Granny Feelgood’s, a favorite treat at Kauai’s community events.
