Kokee Series: Plum Preserving Workshop Sunday, July 25th

Kokee Plums, officially known as the Methley Plum are in full season! We have always wanted to lead a forest to jar preserving class and now is our opportunity. You are invited to join Aletha and Annika in Kokee to harvest and preserve your 5lb. allotment of Kokee Plums. In this 4-hour field workshop, Aletha will take you through the preserving process from start to finish. We will meet at the Kokee Museum for our permits, tromp through the forests, foraging for our plums, then head to one of Kokee's historic cabins to create our preserves.

During the workshop we will create two to three, low-sugar Kokee Plum preserves. We will examine key topics such as the role of sugar, the importance of lemon juice and how to add it, the states of cooking, how to create a jam set without adding commercial pectin, while practicing testing accurately for doneness. This class will begin with harvesting plums, pupus and a preserving discussion, then proceed to the cooking processes.

Date/Time: Sunday, July 25th, 2021 10 - 2pm (may run a bit longer)

Location: Kokee, near the lodge (Cabin location shared with those who register) Weather permitting, class will be conducted outside on a covered lanai. 

Class Limit: 12 Students ages 16 and up

Workshop Includes: Hands-on, personal instruction, all needed supplies, heavy pupus, refreshments, and class-made plum preserves to take home.

 

Important Note: Due to the increase of community spread Covid 19 Cases on Kauai all registered attendees will be required to show proof of completed vaccination before the workshop. The final vaccination must have been administered at least 2 weeks prior to the workshop. There will be no exceptions. This is our first Monkeypod Jam event since December, 2019. We look forward to hosting many more workshops this year, but must be diligent in keeping our community safe. We thank you in advance for your understanding. 
 

Aletha Thomas, a former schoolteacher, launched Monkeypod Jam in 2010 when she was placed on furlough. Each furlough Friday, Aletha would pull out her French copper pot and make jams and jellies using ripe Kauai fruit. With each batch, she was preserving the season’s harvest while also preserving childhood memories of her grandmas, both of whom she remembers preserving the season's local bounty.

In February of 2014, Aletha enrolled in Hawaii’s Master Preserving Program. Now certified as a Master Preserver and with over twelve years of teaching experience, Aletha is eager to share the ins and outs of home preservation with others who share her interest and passion for preserving the seasons.
